“Farófias” are a classic of Portuguese sweets and are made almost exclusively from egg whites.
Egg whites are an ingredient present in most cakes and sweets and are used just to whip (in a castle), therefore raw, or else cooked, usually adding sugar. To make “Farófias” one whips the egg whites in a “castle” format. However, most of us are not sure why, when whipped, they acquire so much volume.
