Yogurt is made from milk, through a fermentation process carried out by bacteria. Yogurt may have appeared for the first time in the East, by chance, when storing goat, buffalo or sheep milk in clay pots subject to high desert temperatures. Another possibility is that it appeared in Turkey, where milk was kept in leather bags hanging on the back of camels, whose body heat would contribute to the fermentation process. The yogurt produced was removed from the saddlebags (or jars), which were again filled with milk without being washed, which guaranteed the continuity of the process.
